Duties and Responsibilities
The successful candidate must be able to:
Plan and produce menu with the assistance of the Catering Supervisors and Cost
Controller
Secure the requested ingredients in the Chef’s Pantry and Cold Room so as to
prevent pilferages.
Request from Stores the appropriate quantities of food and beverage items,
taking into consideration the volume of business.
Issue instructions daily to Cooks and Porters on what is to be prepared for
breakfast and lunch if in the afternoon shift and on what to prepare for supper if
in the morning shift.
Monitor the quality of meals prepared in the kitchen and the way these are
presented on the servery. Also ensuring that meals are always prepared on time.
Prepare Ala Carte and Takeaway Cafeteria dishes in the Ala Carte kitchens
Prepare Buffet Menus for events and functions/conference delegates
Ensure recipe costing in liaison with Cost Controller and Catering Supervisors
Ensure the kitchen and all storage areas are always in the highest state of
cleanliness
Mark staff register ensuring all junior staff report on duty and knock off at
approved times
Ensure that all health, safety and hygiene procedures are respected in the
kitchen
Report any malfunctioning equipment and any incidents/accidents to Catering
Supervisors as they are identified.
Carry out any other duties as may be found necessary by the Catering
Ssupervisors and Manager, Catering Services.
Qualifications and Experience
Higher National Diploma in Professional Cookery (HEXCO) or Degree or HND in
Culinary Arts (City & Guilds) or any recognizable examining body.
2 A Level passes.
A minimum of 5 ‘O’ Level passes including English Language and Mathematics.
Class 1 Trade tested Certificate will be an added advantage.
At least 3 years’ relevant experience in the Catering Industry
